This is a 100% rye whisky finished for just over 2 years in a 45-year-old ex-solera oloroso sherry cask from a bodega in sanlúcar de barrameda.This is coastal sherry territory, where the atlantic winds give the wine a signature minerality. That maritime character has transferred beautifully into the whisky, melding with the oloroso toffee nuttiness to create an insane amount of complexity and richness. Nose: salted caramel, golden honeycomb and a hint of honeysucklepalate: a deepening saline-caramel sweetness, layered with vanilla ice cream and overripe apricot, before opening out into pecan pie richness. Banana chips bring a crisp, tropical chew there’s also nostalgic notes of warm waffles with maple syrupfinish: a playful fizz of cola cubes grounded by toasted walnuts, oak sawdust, and a flicker of smoked sea salt only 1109 bottles created.
