This second batch of the gael is made with a blend of 60% malt whiskey and 40% grain whiskey, matured in ex-bourbon and sherry casks. Vibrant and fruity, the gael is a mission statement for the style of whiskey jj corry plans to one day make itself once its own stock matures. Tasting notes the nose is fresh and alive with the heady, summery scent of amalfi lemons, toffee apples, acacia honey and fresh-cut hay. The palate is similarly vibrant with crunchy green apples, cereal and lemon posset, while a dusting of lime zest and ground peppercorns adds a tingly spiciness before a long, creamy and lemony finish.
