Here the vines enjoy a south southwest exposure and deep clay-limestone soils. After fermentation in steel tanks, the wine rests for over 10 months in a mix of steel 20% and barrels 80% . The soil and climate conditions combined with careful work in the cellar guarantee the production of powerful, balanced, and mature wines. The chablis grand cru vaudésir is an intense, mineral, and characterful wine with a rich and broad aromatic profile with notes of yellow and tropical fruit, and vanilla hints. On the palate, the wine reveals a perfect balance between power and freshness. It is rich and dry, crisp and mineral. The finish is long and gently spicy. It is very versatile in food pairings: it goes well with lobster, capon, and foie gras.
