But manager guillaume michel has a wealth of knowledge to draw from, and has succeeded in creating some of the finest, terroir-driven white wines that burgundy has to offer. This wine comes from the premier cru of butteaux , in the western half of the montmains valley. Grapes are harvested from four different tracts of land on the precipitous slopes, before making a short 2km journey back to the cellar
Where the magic happens. This premier cru exhibits a complex, well-rounded nose, with notes of baked apple, honey and yeast, supported by whiffs of brushy undergrowth and minerality. On the palate, this is a perfect example of unoaked chardonnay. Glossy notes of citrus and green apple envelope the mouth from the start, followed by hints of honey and a melody of minerality
Limestone, wet rock and salt. The finish is long and driven by a pleasant acidity. Pair it with delicate seafood, or lean game meat such as rabbit.
