In addition to implementing family practices of low yields and natural winemaking, theo has started a small negociant business and also acquired domaine roc breïa, in the mâconnais region. The savagnin grapes, the most representative variety of the jura region, come from vineyards planted on marly-limestone soils, which enhance their fresh and mineral character. Theo sources his grapes, selecting them from winemakers who work the vineyards with respectful practices. Vinification occurs spontaneously with indigenous yeasts. The result is an expressive wine that remains true to its character, with a bright, clear straw-yellow color and golden highlights.
