After manual harvesting and careful bunch selection, fermentation takes place at a controlled temperature in stainless steel tanks. The wine is then aged in french oak barrels 29% new for approximately a year and a half. The result is an elegant and expressive wine with an intense aromatic profile and notes of blackberries, plums, and blueberries, followed by hints of wood and toasted dark chocolate. On the palate, it is concentrated and rich, with a full body and balanced acidity. It is smooth and fruity with a long finish reminiscent of a touch of mocha. It is excellent with beef brisket and short ribs.
