The almond tree belongs to the rosaceae family. Its fruit contains one or two almonds with an oil content of between 50 and 65%. Only the sweet almond is edible, while the bitter variety is toxic. Native to asia, the almond has been cultivated throughout the mediterranean since the middle ages.
