Chickpea pancakes:
100 G chickpea flour, 200 ml water, 3 tablespoons olive oil, teaspoon salt. Mix all the ingredients in a bowl until a homogeneous dough is obtained. In a non-stick pan, brown the pancake over low heat on both sides for a few minutes. Chickpea pancakes go great with pan-fried vegetables with salad or tzatziki.
Recipe for quick hummus: 50g of chickpea flour, 300ml of water, 1 clove of finely chopped garlic, 2 tablespoons of sesame paste, 3 tablespoons of olive oil, salt and a pinch of black pepper. Mix the chickpeas with 100ml of cold water. Boil the remaining water with salt. Add the chickpea mix and boil, stirring vigorously, then add the rest of the ingredients. Add salt and pepper to taste. It can be served with flatbread or focaccia.
