Here, the chillies thrive in open farming conditions, with many organic practices at play. Our dedicated team carefully harvests the peppers and brings them to central kigali for processing. In our modest facility, our passionate rwandan staff sort through the chillies, ensuring that only the best make it into our puree. The chillies are then minced and mixed with salt, and over the next few weeks, they undergo a natural lacto-fermentation process in barrels.
